The crust is the lever, not the pizza

Two pizzas can be forty points apart on the same scale.

I looked up fourteen pizzas.

Not to rank them. To find out how much room there is inside the word pizza, because the advice I was given treated it as one thing you either eat or do not.

That is the whole spread, and both ends are pizza. The thin crust buried under toppings scores lower than the plain one, because the cheese and the meat slow down the base they are sitting on.

Eight grams a slice does not sound like much until you have three of them. Then it is the difference between one slice and none.

Calzone

22.5

Grams of fat /100g

The calzone is the same dough folded over and sealed, so you get more of everything per bite. It carries slightly fewer carbohydrates than pizza gram for gram, and considerably more fat. Lighter is not the word for it.

Label and database figures, not medical advice. Chains and recipes vary, so the box in front of you is the one that counts.

🔬 Where this comes from: The index figures come from published glycemic index tables, where a loaded thin crust comes in around 30, a thick crust supreme around 36, a stone baked vegetable one around 54, a plain cheese pizza around 60, and an Italian parmesan and tomato around 80. The slice figures are 37 grams of carbohydrate for a slice of a 14 inch pepperoni and 45 for a 200 gram deep dish slice. The calzone comparison is per 100 grams, which is the only fair way to compare two things that come in such different shapes. Index values are averages across small groups of people and your own response will sit somewhere around them rather than on them.

Pizza is not a food.
It is a category.

Hot take

Thin and loaded beats thick and plain, every time

👍 Agree, pile it on
👎 Disagree, thick crust forever
